Ingredients

Pie Crust⁣ Ingredients

  • 1/2 cup almond flour ⁣
  • 1 egg⁣
  • 1 cup shredded mozzarella cheese ⁣
     

Filling⁣ Ingredients

  • Turkey kielbasa, diced⁣
  • 6 eggs⁣
  • 1/2 cup thinly sliced onions⁣
  • 1/4 tsp parsley ⁣
  • 1/2 tsp seasoning salt ⁣
  • 1/4 tsp freshly ground black pepper⁣
  • 1/4 tsp oregano ⁣
  • 1/4 tsp garlic powder ⁣
  • 3/4 cup chopped spinach ⁣
  • 1/2 cup shredded mozzarella cheese ⁣

Instructions

  1. Place cheese in microwave for 30 seconds. Add egg and combine and then add almond flour. Knead well to make the dough. ⁣
  2. Roll out dough between two sheets of parchment paper. Spray 9-inch pie dish with Pam and cover with the rolled dough. ⁣Cut away extra dough, gently form the bottom of the crust, if it cracks use the extra dough to patch it. ⁣
  3. Using your fingers pinch the dough to get the curves or if you have a pan already with the grids that works as well.⁣
  4. Refrigerate crust for 30 minutes and preheat oven to 350 degrees. Tent the the pie crust with foil paper and bake for 15 minutes.⁣ Remove from oven and allow to cool while you make the filling. ⁣
  5. Cook kielbasa and onion in a skillet over medium heat until it is lightly crisped, stirring frequently as not to burn the onion.⁣
  6. In a medium bowl thoroughly whisk the eggs, dry ingredients, spinach, cheese and 1/2 of the kielbasa and onions, mix well.⁣⁣
  7. Add a little cheese to the crust and pour egg mix, scatter remaining kielbasa and onions on top, feel free to add more cheese.⁣
  8. Bake at 350 degrees for 30-35 minutes, or until a knife inserted comes out clean. Center should be a little jiggly. Allow to cool for 7-10 minutes before cutting.⁣ Enjoy!
