  • 6 tbs melted butter
  • ¼ cup low-carb sweetener (Ex. erythritol). For a paleo version, you can use honey. Honey is not recommended for keto.
  • 1 tsp rum extract
  • 1 tsp vanilla
  • Zest of 1 lemon
  • ½ tsp cinnamon
  • Optional spices
  • Pinch of powdered ginger
  • Pinch of nutmeg powder
  • 2 medium eggs
  • Pinch of salt
  • ½ tsp baking powder
  • 1 cup of ground almonds/almond meal
  • ¼ cup coconut flour
  • 1 cup plum halves
  • Optional sour cream for serving

  1. Prepare plums. Cut them in halves and remove stones.
  2. Preheat oven to 180°C with fan.
  3. Whisk melted butter with sweetener, rum, vanilla, zest of lemon, pinch of salt, cinnamon and optional spices like pinch of powdered ginger and nutmeg.
  4. Add eggs and continue to whisk until mixture smooth and glossy.
  5. Whisk in baking powder, ground almonds or almond meal and coconut flour until you get nice mixture.
  6. Butter pie pan and sprinkle with ground almonds.
  7. Pour the mixture into prepared pie pan. We recommend using a 9 inch pan or smaller.
  8. Place plum halves on top.
  9. Optionally you can put some blanched almond slices on top.
  10. Bake keto plum cake for 20 minutes or until baked.
  11. Serve plum pie as a dessert or breakfast with a cup of tea or coffee. You can add 1 tbs of sour cream on top of your slice. It's delicious!
