Ingredients

  • 1 pound carrots peeled and sliced
  • 5 fresh sage leaves
  • 2 tablespoons of dairy-free butter
  • 1.5 cups vegetable broth
  • 1/2 cup full-fat canned coconut milk
  • 1 scoop Stay in Keto MCT Powder
  • Sea salt to taste
  • Pistachios to top

Instructions

  1. Melt dairy-free butter in a saucepan over medium low heat. Once bubbling, add carrots and sage. Cook for 5 minutes.
  2. Add vegetable broth and coconut milk and bring to a boil. Once boiling, lower heat to a simmer and cover with a lid. Simmer for 5-10 minutes.
  3. Add mixture to a blender and blend with the MCT. Blend until completely smooth.
  4. Add salt to taste and top with fresh sage leaves and pistachios. Enjoy!
