  • Blanched almond meal 1.5 cup/150 g/5.3 oz
  • Coconut flour 2 TBS/20 g/0.7 oz
  • Baking powder 1/2 tsp
  • Pinch of salt
  • Ham finely chopped 1 cup/120 g/4.23 oz
  • 1 spring onion finely chopped 20 g/0.7 oz
  • 1 large egg
  • Cream cheese 1/4 cup/60 g/2.11 oz
  • Softened or melted butter 1/4 cup/60 g/2.11 oz

Optional Ingredients

  • Pinch of garlic
  • Pinch of pepper
  • Pinch of red paprika or crushed chili pepper

  1. Preheat the oven to 180°C/350°F and prepare a baking tray layered with a parchment paper.
  2. Mix almond meal and coconut flour with baking powder and pinch of salt.
  3. Add finely chopped ham and spring onion, egg, cream cheese and butter.
  4. Stir everything with a spoon, spatula, or with your hands to form the scones dough.
  5. Form the scones (see photo in the blog post) and bake in a preheated oven on 180°C/350°F for 15 - 20 minutes or until baked (depends on your oven).
  6. Serve and enjoy!
