Cupcake Ingredients

  • 1/2 cup butter
  • 2/3 cup keto granulated sugar
  • 2 tsp vanilla extract
  • 6 whisked eggs
  • 2 tbsp heavy cream
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 Scoop of Stay in Keto

Frosting Ingredients

  • 8 oz softened cream cheese
  • 1/2 cup softened butter
  • 2/3 cup powdered keto sugar
  • 1/2 tsp vanilla extract
  • Green food coloring

Cupcake Instructions 

  1. Preheat oven to 350F. Line two 6 piece cupcake pans with liners and grease 10 of them.
  2. Beat the butter, sugar, salt, vanilla extract, and eggs together. Then add the milk and mix until combined.
  3. In a small bowl, mix the coconut flour, cinnamon, baking powder and MCT. Stir the wet and dry ingredients until combined.
  4. Fill the the 10 liners with the batter. Bake the cupcakes for 17-20 minutes.5. Remove the cupcakes and cool completely before frosting.

Frosting Instructions

  1. Beat the butter and cream cheese together until smooth.
  2. Slowly add in keto sugar and vanilla. 
  3. Add in green food coloring slowly until you reach your desired green color.
  4. Beat until fluffy and thick.
  5. Frost your cupcakes and enjoy!
