Ingredients

  • 4 oz shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 egg
  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 tbsp monk fruit sweetener 
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 scoop Collagen Peptides
  • Powdered keto sugar to top (optional)

Instructions

  1. Add mozzarella and cream cheese to a bowl and microwave at 15 second intervals until melted. 
  2. Whisk the egg into the cheese mixture.
  3. Add the almond flour, coconut flour, monk fruit, baking powder, collagen, cinnamon and salt to a small bowl and whisk to combine.
  4. Combine the wet and dry ingredients and stir. 
  5. Knead dough and form into a small ball.  Wrap in plastic wrap and refrigerate for 20-30 minutes or until firm.
  6. Preheat the oven to 350° F and line a baking pan with parchment paper.
  7. Remove the dough from the plastic and roll into a rectangle with a rolling pin. 
  8. Cut into triangles and roll each triangle (large end to small end) to form the roll shape. 
  9. Bake for 20 to 25 minutes until golden brown. Top with cinnamon and powdered sugar. Enjoy!
