Instructions
Mash three medium ripe bananas in a bowl. Add two eggs, 1/2 cup of unsweetened applesauce, and 1 teaspoon of vanilla. Mix well.
In a separate bowl, add 3/4 cup of coconut flour, 1 scoop of @vitaminbounty keto chocolate protein powder, 1/4 cup of coconut sugar (you can omit if you don’t want it to be rather sweet, or sub 2 tablespoons of honey or agave),1 teaspoon of baking powder and a pinch of salt. Mix together.
Slowly incorporate the dry ingredients into the wet.
Add 1/3 cup of chopped walnuts or nuts of your choice (or omit completely). Add 1/4 cup of dark chocolate chips and mix well.
Pour batter into a loaf pan lined with parchment paper. Sprinkle a few chocolate chips and walnuts across the top.
Bake at 350 for 40-45 minutes or until a toothpick comes clean. Let cool for 15-20 minutes before eating. Enjoy!
